Yūgana (優雅な), a Japanese word meaning graceful, beautiful, gentle, kind, and friendly, depending on the context used.
The process of sushi making, right from sourcing the freshest ingredients, flavours, and atmosphere whilst watching the chef perform his theatrical dance is all, Yūgana.
Our founder and head sushi chef, Edidiong Nsek, started cooking at the age of 10.
He moved to the UK nearly 20 years ago, where he got exposed to cuisines across the globe.
His passion for sushi began over 10 years ago in his home kitchen to impress a crush.
That marked the beginning of his obsession with this very intricate culinary art form.
Over the years he worked in sushi bars across the South of England.
The last Sushi Bar where he worked is the only sushi restaurant currently in the Michelin Guide in the South West of England.
Chef Edidiong worked as the right-hand man under the owner Chef Kamil Skalczynski of Art Sushi, a sushi master runner up of the World Sushi Cup, Japan and on the World Sushi Institute Adviser awarded by the Japanese Government.
As captain of his own ship, you can now enjoy his combined culinary skills from years of experience.
Everything in Yugana Sushi is unique whilst still utilising the traditional Edomae techniques mixed with a touch of fusion.
